Canaletto
- Authentic Venetian cuisine. The ultimate Venetian restaurant. Created by
the founders of Il Fornaio, Canaletto features the food and wine
of the Veneto region of Italy. Il Fornaio's Executive Chef
Maurizio Mazzon evokes Venice and its countryside with his menu of
fresh seafood, beef, game and poultry from wood-fired rotisseries
and grills. Mazzon - a native Venetian who has worked throughout
Venice at renowned dining destinations like All' Angelo and Hotel
Cipriani - also includes northern Italian staples like risotto,
gnocchi and polenta on Canaletto's menu. The restaurant's unusual
wine list spotlights the lesser-known wines of northeast Italy.
Canaletto's unique two-story architecture incorporates many facets
of Venetian-inspired design. "Outside" tables
surrounding a 40-foot tall statue sit in the heart of St. Mark's
square, much like the cafes lining the original Piazza San Marco.
Past Canaletto's elegant double-arched bar, luxurious navy
blue-striped booths under 16-foot tall ceilings offer a more
refined dining experience. Polished hardwood floors blend into
terrazzo tile leading to the exhibition kitchen. Spectacular
Venetian lights and chandeliers crafted by the artisans of Murano
cast a flattering glow. Upstairs, four distinct private rooms -
for groups as small as six or as large as sixty- share a central
entrance and lounge, reminiscent of a Venetian palazzo's primo
piano. With unsurpassed views of the Grand Canal and the activity
below, these will be some of the most impressive private dining
rooms ever seen. The exceptional food, professional service and
remarkable architecture will make Canaletto one of the must-visit
restaurants at The Venetian and in Las Vegas
Delmonico
- New Orleans-style steakhouse with a Creole flair. Combine America's favorite chef with America's
favorite cuisine and you have Delmonico Steakhouse located in The
Venetian Resort Hotel & Casino. Chef Emeril Lagasse known for
his New Orleans cooking adds this influence to the tradition of
the American Steakhouse. Delmonico Steakhouse takes its name from
the century old New Orleans institution, Delmonico Restaurant
& Bar. Designed by architectural firm Stubbins &
Associates with interior design by Holden and Dupuy, the
restaurant has an earthly but modern Tuscan look and seats 320 and
holds 60 at the bar. The restaurant will be open 7 days a week for
lunch and dinner and will also serve a select menu at the bar. The
restaurant will also have an in-house sommelier for those with a
serious passion for wine. Delmonico Steakhouse personifies the
bold passion style of cooking that has made Chef Emeril Lagasse so
well known. He is also known for his hit TV series on the Food
Network's "Emeril Live" which currently reaches more
than 30 million viewers daily. His cookbooks have been touted on
the New York Times bestseller list and he has been voted as Best
Southeast Chef by the James Beard Foundation. Last year he was
voted Chef of The Year 1998 by GQ magazine. With these accolades
behind him he has yet one more quest at The Venetian with
Delmonico Steakhouse.
Lutece
- Modern French with classic influences. Its name comes from the ancient Celtic name for
Paris, the birthplace of French gastronomy. Lutèce is one of the
jeweled pinnacles in the world of fine dining in which all others
strive. Eberhard Müller, the successor of Andre Soltner at the
famed Lutèce in New York, is bringing his brand of French Cuisine
to The Venetian. The menu is ripe with modern French delicacies
and solid classic influences that combine the best of classic,
familial and newer French cuisines. Chef Müller will bring a menu
similar to that of his Lutèce in New York, but he promises a more
progressive list of choices. Among the highlights, a nightly prix
fix menu degustation-a true "Tour de Force" of courses.
Chef de Cuisine will be Robert Kirchoff who will head up this new
Las Vegas establishment. To compliment the innovative menu will be
an equally tantalizing wine cellar featuring selections of
top-producers with emphasis on French and American vintners,
complete with a knowledgeable sommelier. This haute French bistro
is synonymous with perfect quality - from the impeccable freshness
of ingredients to the exquisite presentation of food to the
seamless manner in which it is served. Chef Müller has created a
leaner, more modern approach to the classic French traditions,
typified by a selection of appetizers such as a salad of tender
lobster and mango or uncooked slices of Atlantic salmon with a
tomato-coriander coulis and entrees ranging from pheasant and beef
short ribs slow-braised in dark beer with creamy mashed potatoes
to Maine sea scallops in a warm black-truffle vinaigrette and
roasted lobster, shelled and bathed in cognac butter. Lutèce,
which will be located on the Casino level, will seat 95 inside and
65 out on the terrace and will be open for lunch and dinner

Pinot
- Brasserie-style atmosphere and hearty California French cuisine. The
menu includes fresh seafood, oysters, and lobster. Famed Los Angeles celebrity chef and author,
Joachim Splichal, an inductee into the James Beard Foundation
Who's Who of Food & Beverage in America in 1995, and voted
"Restaurateur of the Year" by the Southern California
Restaurant Writers Association Inc. in 1999, and his
entrepreneurial wife, Christine Splichal, of the Patina Group,
bring the lighter tastes of French cuisine to their
Franco-California bistro, Pinot Brasserie. The menu offers steak,
poultry, pastas, seafood and wild game, complete with a large
rotisserie and oyster bar. Chef/Partner Octavio Beccara and
Executive Chef Brian Bennington will be heading up the kitchen.
The wine list promises to be as extensive as the menu and will
feature the best European and American wineries. There will also
be a wide variety of other liquors from grappa to single malt
scotches and dessert wines and ports to choose from. Pinot
Brasserie will be open for lunch and dinner in a rich, yet casual
authentic French bistro setting. Most of the décor and
accoutrements were imported directly from France, including the
wooden French door façade from a hotel in Lyon, the copper pots,
kitchen utensils, and Coq d'Or, the large weathered cast-iron
rooster that stands guard at the entry. The concept is to recreate
an authentic urban brasserie featuring a rotisserie and oyster bar
and dining al fresco.
For every mood there is a setting and Pinot Brasserie, located in
Restaurant Row on the Casino Level, will have not only a main
dining room, but West and East side private rooms, a fully stocked
bar, casual outside dining, and an oyster bar complete with rubber
booted, approved waiters reminiscent of a true Parisian brasserie.
Royal Star
- Hong Kong/Cantonese-style cuisine, featuring seafood and dim sum. Restaurateur Kevin Woo and master Hong Kong
chefs Lai Lam and Chiu Kee Yung, established the highly regarded
Royal Star Seafood Restaurant in California. They now combine
their talents with Theresa Lin, the world's most respected arbiter
of Chinese cooking, in this new restaurant, Royal Star at The
Venetian. The synergy between these four is reflected in the
amazing menu, which revolves about traditional Chinese dishes,
selected for those that are appreciative of both eastern and
Western tastes, Appetizers include an exciting variety of
specialties with their origins in various regions of China,
ranging from the familiar (lettuce cups) to the exotic (giant
scallops). Seafood entrees include crab, lobster, fish, prawns,
shrimp, and geoduck, all taken from a live tank. There is also a
large offering of classic and creative meat, poultry, and
vegetarian dishes. Revered master chef Chiu Kee Yung heads a
separate and complete dim sum kitchen, with a product unmatched
anywhere in its creativity and quality and served tableside in
traditional carts. Meals will be served from 9 a.m.-midnight.
There will be a full wine list with European and American
selections and they will also feature Asian wines, sake and
authentic tea services. The simple and clean design is geared
toward serene elegance which artfully blends natural materials
such as shimmering slate floors and wood accents richly toned in
figured veneers of natural wood enveloped by cool celadon walls. A
silver-leafed ceiling, six circular banquettes, rich green and
bronze carpeting and elegant chenille upholstery will surround
authentic Chinese artifacts that complete the fusion of
contemporary design with traditional Chinese art. Commissioned
artwork will adorn the walls and cooking and food shows will
occasionally be offered with touring and visiting chefs. Located
at Restaurant Row on Casino Level, capacity is 200 seats with two
private rooms for 12 and 40.
Star Canyon
- Hickory-grilled steaks and fish. Combination of Texas BBQ pit-style
cooking with Southwestern and Cajun influences. Star Concepts Chef/Owner Stephan Pyles - one of
the founding fathers of Southwestern Cuisine, was the first Texan
inducted into Who's Who of Food and Wine in America. Author of The
New Texas Cuisine, Tamales, and New Tastes From Texas, Stephan is
also host of the nationally syndicated PBS series, 'New Tastes
From Texas,' now in its second season. The cuisine comes in highly
seasoned ranch house portions drawn from the multi-faceted texture
of different cultures and historical periods in the Lone Star
State and are executed with classic French culinary techniques. A
wood-burning oven and large rotisserie and grill will be used.
Signature recipes include Bone-in Rib eye with Pinto Bean-Wild
Mushroom Ragout and Red Chile Onion Rings. Sides and accoutrements
include such unique innovations as Grilled Sirloin-Sweet Potato
Enchiladas with Queso Freco and Black Bean Relish, and Chile
Relleno with Smoked Chicken and wild mushroom Enchiladas. Star
Canyon is large and features a dining room that will seat 300 in a
high-concept cowboy setting down to themed cowboy china. The
sophisticated ranch look with contemporary Western décor and a
bit of Cowboy whimsy, uses natural resources and artisans from
Texas to complete the premier custom interior. The specialty show
kitchen will feature a wood-burning oven and rotisserie grill for
all eyes to see. There will be two private dining rooms to
accommodate smaller parties and a wine room that seats 10. There
is also a full bar that seats 40 featuring infused tequilas and
other unique and specialty drinks. Stephan Pyles' cookbooks, gift
certificates, Star Canyon china, t-shirts, caps, Chile powders and
spices, star muffin pans and muffin mix are just a few items
guests can take home from their dining experience. Located at

Taqueria Canonita
- Authentic Mexican cuisine, featuring homemade tortillas. Another flavorful restaurant from Star Concepts
Chef/Owner Stephan Pyles. Alena Pyles, his sister, is Chef de
Cuisine at Taqueria Canonita. Stephan Pyles - one of the founding
fathers of Southwestern Cuisine, was the first Texan inducted into
Who's Who of Food and Wine in America. Author of The New Texas
Cuisine, Tamales, and New Tastes From Texas, Stephan is also host
of the nationally syndicated PBS series, 'New Tastes From Texas,'
now in its second season. The featured specialties on this
"marketplace menu" are authentic Mexican dishes with a
New American ambience including tacos, tamales, tostados, gorditas,
and rellenos made with grilled and roasted meats, vegetable and
seafood. Tacos al carbon will feature beef, chicken and pork
varieties served on fresh, hand-made corn tortillas, accompanied
by spicy, creamy slaw. Other entrees include Quesidillas with
Shrimp and Mango and Carbrito Barbacoa with Black Beans, featuring
spit-roasted barbecued young goat with Clay Pot Black Beans. The décor
will be as vivid as the menu with its high-ceiling and central
exhibition kitchen in a casual ambience. The use of sculptured
steel and wrought-iron gates, amber lighting and tabletops inlaid
with colorful tiles instill the warmth of old Mexico. The
exhibition kitchen will be a focal point. The dining room is
inclusive of al fresco dining canal side and seats 150 and the bar
seats 20. Taqueria Canonita is located canal side at The Grand

Tsumani
- Pan-Asian cuisine with sushi bar. Modern and eclectic.
Valentino
- A five-star contemporary restaurant serving Northern Italian cuisine.
Voted one of the top 10 wine cellars in the country. Veteran restaurateur Piero Selvaggio, known for
cultivating one of the finest wine cellars in the world, brings
his famed Los Angeles restaurant 'Valentino' to The Venetian.
Selvaggio's expertise is heard weekly on a leading Los Angeles
radio station and he is a frequent host on radio's James Beard
award-winning nominated program "Good Food" with
Jennifer Farro. Selvaggio, who also owns and operates LA's Primi
and Posto, is currently working on his autobiography. Valentino at
The Venetian will showcase a menu that is innovative, yet faithful
to the Italian culinary tradition. The cuisine is contemporary
Italian focusing on the quality of ingredients, revisiting
traditional recipes, and adapting to the local market. Many of the
ingredients in the kitchen are imports from Italy, including white
truffles, fresh porcini mushrooms, burrata cheese from Puglia, and
Mediterranean and Adriatic Sea fish. Breads are baked fresh daily.
Chef de Cuisine Luciano Pellegrini will create a magnificent menu
that will change seasonally. Diners can expect an elegant dining
experience for dinner. Nestled at the front of the restaurant is
the Valentino Grill which will serve simple, quick and a
lighter-styled foods, and specialize in grilled pizza. Valentino
will be open for lunch and dinner. A comprehensive collection of
the best vintages will premier Italian, Californian and French
wineries. The décor is well-suited for this fine dining
experience as well as the more casual Valentino Grill and
Pizzarella. The Grill area is the entryway to Valentino
Restaurant. The main concept is that of "Walking down a
street" and uses such materials as wood, terrazzo flooring
and lighting through Venetian glass. A vaulted ceiling and a main
room filled with elegant earth tones with splashes of color
complement the wood. A selection of 24,000 wines from around the
world will be visible. The chairs are of a unique design of soft
leather that wraps around the guest's back when seated. Besides
the main dining room there is a second, private dining room and a
small, exclusive wine cellar-styled room that seats 25. There is
also a lounge area and bar. Valentino is located at Restaurant Row
at Casino Level.
Zefferino
- Authentic Italian cuisine specializing in seafood.Through almost five tumultuous decades, a
blessing emerges where Italian tastes combine with the culinary
mermaid of the sea. Four generations of Zeffirinos have created a
true spectacle-a restaurant so well received for its specialties
and signature cuisine, Pope John Paul II's secret passion for
Zeffirino's world's famous pesto affords him a hand-delivered
parcel of pesto and sausages each year. Chef de Cuisine Gian Paulo
"Zeffirino" Belloni brings his authentic Italian
technique to Zeffirino at The Venetian. Zeffirino will be open
daily for lunch and dinner and will offer a late-night menu. With
more than 130 selections of wine, plus a special Captain's list,
this enriched restaurant - filled with history and excitement -
will showcase a wine cellar of exclusive California and Italian
vintages. The restaurant will focus on seafood with Italian flair.
Delectable to be served nightly include: filet of sole piccola,
lobster tail, fresh fish, grilled fish, zuppa, salads, and
pizzarettes and pastas. Specialty oils, pastas, spices, tomatoes
and other ingredients will be imported from Italy and all breads
and pastas are baked on the premises. The décor is sophisticated
and elegant with gothic undertones. A special feature will be the
handcrafted Italian bar, wine cases and furniture - Venetian
style, with an irresistible feel for the romantic. The 14,000
square foot Zeffirino seats 450, hosts six private room and a
24-stool bar and lounge area. Located canalside at The Grand Canal
